Leonida isn't just Vice City. The Grassrivers swamps and the coast and ocean surrounding them have their own ecosystem — and the trailers have already shown part of it. Here's what's confirmed, what's probable given Rockstar's experience on Red Dead Redemption 2, and what's still speculation.

The Grassrivers swamps
Alligator
Spotted as early as trailer 1 in the Grassrivers wetlands — the most iconic animal of Leonida's version of the Everglades.
Wading birds (herons, egrets)
Visible in the background of several swamp scenes, typical of Florida's wetlands.
Snakes
No confirmed appearance, but consistent with Everglades wildlife and the precedent set by Red Dead Redemption 2.
The Vice City coast and ocean
Sharks
Already present in GTA V off the coast of Los Santos; Vice City's bay and ocean are just as fitting.
Dolphins
Consistent with Vice City's coastal, festive atmosphere, not confirmed in the trailers.
Jellyfish
No spotted appearance, but a classic of Florida's coastal waters.
The skies of Leonida
Seagulls and pelicans
Visible in flight in several coastal shots of the trailers, typical of the Vice City shoreline.
Vultures
Not confirmed, but consistent with the rural areas and warm climate of Leonida.

Stray dogs and cats
A classic urban presence in GTA games since San Andreas, not yet confirmed in GTA 6's trailers.
Raccoons and opossums
Typical urban wildlife of the American South, consistent with Leonida's atmosphere but not spotted to date.
What Rockstar's track record suggests
Red Dead Redemption 2 remains, to date, Rockstar's most accomplished game in terms of wildlife: over 200 animal species, with behavior and AI specific to each, and a full hunting system. GTA V, on the other hand, was limited to a handful of species (sharks, dogs, cougars, boars) with no real dedicated system. GTA 6 uses an evolved version of the RAGE engine that powered Red Dead Redemption 2 — which makes a richer ecosystem than GTA V's plausible, though Rockstar hasn't confirmed the exact scope of the system.
